Eclairs

I know, I know. These are just eclairs spelled the Polish way. But as happens with foodways, things travel and become staples of faraway bakeries and, in their way, become of that place too. You’d be hard pressed to show me a cake shop in Poland without one of these rustic-style eclairs. Yes, in the high-end pastry shops, be it in Gdańsk, Poznań, Wrocław, or Warsaw, you can find as obsessively symmetric an eclair as in any French patisserie, tidy lines and sleek fondant glaçage. But there’s
