This cherry filling works as well with sweet cherries as sour cherries. Use as a topping for cheesecakes and Danishes or as a filling for puff pastry turnovers.
Toss the cherries, sugar, lemon juice, and vanilla seeds (if using) in a medium mixing bowl and set aside for 1 hour, stirring a couple times while it sits. After an hour, the juice will have leaked from the cherries, and they will be sitting in quite a bit of liquid. Stir in the cornstarch until no lumps remain, then transfer everything to a medium saucepan.
