Sweetened twaróg filling has a rich cheesecake flavor and, like Budyń, adds a creamy filling to countless Polish yeast pastries.
Grated zest of ½ lemon or orange (optional)
Strain the twaróg by wrapping it in a cheesecloth and twisting the ends tightly to squeeze out the excess water. Then, in a medium mixing bowl, whisk the strained twaróg together with the sugar, egg yolks, cream cheese, flour, vanilla, and zest (if using) until all the ingredients are incorporated and you have a smooth paste.
