Well-cooked rice should be moderately sticky and very shiny with a slight fragrance. A typical rice measuring cup can hold a volume of about 180 ml (6 fl oz), which is about 150 g (5⅓ oz) of rice. The ratio of rice to water should be 1:1.1 or 1:1.2.

Ingredients

  • Rice 2 cups, about 300 g (10½ oz)
  • Water

Method

  1. Wash rice in ample amount of water. Stir quickly and discard cloudy water immediately.
  2. Mix rice well with the heel of your palm, making about 20 circular motions to scrub out the starch.
  3. Add water and drain. Repeat until water runs clear.
  4. Pour in at least 2 cups
