Japanese curry is great with udon, a type of white wheat noodles, too. Use vegetables of your choice, such as spinach, yellow onion or carrot.

Ingredients

  • Shiitake mushrooms 6
  • Japanese leek 1 stalk
  • Deep-fried bean curd puff (aburaage) ½

Method

  1. Remove stems from mushrooms. Wipe mushrooms with a damp paper towel and slice into 1 cm (½ in) thick pieces.
  2. Taking only the white part of the leek, slice diagonally into 1-cm (½-in) lengths.
  3. Blanch bean curd puff briefly and cut into 3-cm (1¼-in) strips.
  4. Heat oil in a pot. Stir-fry pork belly over medium-high heat until it browns. Add mushroom
