Shirasu, or cooked whitebait, is rich in calcium. Studies show that every 100 g (3½ oz) of this healthy fish contains 500 mg of calcium. Because of its tender flesh, it is often used for baby food. It also goes well with salad, pasta or omelette. If you wish to reduce the salt in shirasu, blanch it before use.

Ingredients

  • Steamed rice 400 g (14 oz)
  • Shredded nori seaweed (kizaminori) 4

Method

  1. Scoop half a serving of rice in each serving bowl. Scatter shredded nori seaweed over and cover with remaining rice.
  2. Quarter cucumber lengthwise and remove the seeds. Cut into 1-cm (½-in) lengths. Mix with whitebait and sesame oil. Arrange mixture over rice, leaving a well in the centre. Drop a raw egg yolk in the well. Repeat for the other serving.
