Ika no shiokara, or preserved squid, is commonly sold in jars and typically served with steamed rice. Like preserved anchovies, shiokara can also be used to add flavour and saltiness to a dish.

Ingredients

  • Emperor mushrooms 150 g (5⅓ oz)
  • Unsalted butter 20 g

Method

  1. Remove the joints of emperor mushrooms. Slice into 3-cm (1¼-in) strips, each 0.5 cm (¼ in) thick.
  2. Melt butter in a pan. Fry garlic until fragrant, then add preserved squid, chilli and emperor mushrooms.
  3. Add cabbage and stir-fry. Season with mirin and pepper. Add salt if desired.
  4. Serve on rice and garnish with pepper.
