One of the most popular Japanese home-style dishes, this is a pleasant dish that tastes as good as it looks. The unique taste of mackerel is enhanced by miso, and the delicious blend of all the ingredients will make anyone ask for more.

Ingredients

  • Mackerel fillets 2, about 110 g (4 oz) each
  • Sal

Method

  1. Marinate mackerel fillets with a sprinkle of salt for 20 minutes. Blanch fillets briefly and chill in iced water. Remove dark red flesh and pat dry with paper towels.
  2. Place mackerel fillets in a pot. Add water and sake. Cover with a drop lid and cook over high heat. When boiling, reduce to medium heat and remove scum. Add sugar. Simmer with the drop lid on.
