I was told by one of my foodie friends that this recipe must be included, as it is a speciality of the Fukui, Nagano and Yamanashi prefectures. This also happens to be one of my favourites, and I like it with lots of cabbage.

Ingredients

  • Shredded Beijing cabbage for garnishing
  • Young mustard greens (wasabi-na) for garnishing
  • Steamed rice 400 g (14

Method

  1. Mix all sauce ingredients and stir well until sugar dissolves.
  2. While pork cutlets are still hot, dip into the sauce and coat evenly. Cut into 2.5-cm (1-in) strips.
  3. Arrange shredded cabbage and mustard greens over rice. Place pork cutlets on top.
  4. Pour sauce over the pork cutlets. Garnish with spring onions and serve with Japanese mustard.
