The term nanban originally refers to Europeans, Dutch and Spanish in particular. Today, food with chilli are called nanban-style dishes, most probably because of their European-influenced flavours. The nanban sauce used here has a blend of sweet, sour and spicy flavours. It is versatile and can be used with many other ingredients such as white fish, salmon, pork, tofu or eggplant.
