Menchi is derived from the English word “minced”. Menchi katsu, meaning deep-fried minced meat, can be made from pork or beef. Grated potato is used here to bind the minced meat together, resulting in juicier and more tender patties.

Ingredients

  • Plain (all-purpose) flour for dusting
  • Egg 1, beaten, for coating
  • Panko breadcrumbs for coating
  • Canola oil for deep-frying

Method

  1. Prepare breaded patties. Grate potato and drain off excess water.
  2. Mix cabbage with salt and let it sit for 10 minutes. Squeeze to remove excess moisture.
  3. Mix all ingredients for breaded patties. Knead until everything is well combined and sticky. Shape into 2 patties.
