A typical tempura dish consists of prawns and assorted vegetables. There are three key points to note for good crispy tempura: Do not stir the batter too much; the batter must be kept cold at all times; lastly, the oil temperature for deep-frying must be constant. You can use ready-made tempura flour, called tempura ko. Simply add water to it and it is ready for use. However, try this recipe for making your own batter if you can.
