A flavourful meal that doesn’t leave you feeling too full, this can be easily prepared with salmon sashimi and leek, flavoured with simple seasoning ingredients.
Stir together all ingredients for sushi vinegar in a microwave-safe bowl. Heat in a microwave for 20 seconds, until salt and sugar have dissolved. Alternatively, heat over a stove. Pour over hot steamed rice and stir to mix well. Leave to cool to room temperature.
Soak leek in water for 15 minutes. Drain and pat dry with paper towels.
