Tori tsukune, or chicken patty, is a versatile ingredient that can be used to prepare anything from yakitori (grilled chicken) to juicy burgers. Here, it is part of a hearty meal with steaming white rice.

Ingredients

  • Plain (all-purpose) flour for dusting
  • Canola oil for frying
  • Steamed rice 400 g (14 oz

Method

  1. Prepare sauce. Pour koikuchi soy sauce, sugar, mirin and sake into a saucepan. Simmer until it reduces by two-thirds. Thicken with arrowroot powder mixture. Set aside.
  2. Mix all ingredients for chicken steak. Mix well until sticky. Shape two round steaks from mixture and dust with flour.
  3. Heat oil in a pan. Fry steaks over medium-high heat until they brown
