A Bismarck is nothing more than a jelly donut. Presumably it got its moniker in the late nineteenth century, when the German chancellor Otto von Bismarck was a household name and jelly donuts were still associated with German immigrants. I suppose you could also call these Boston creams, even if the filling isn’t the traditional custard, which of course you could use instead of the marshmallow filling.
