Combine the water and sugar in a small nonreactive saucepan. Bring to a boil and cook at a steady simmer for 2 minutes (no more) until the sugar is thoroughly dissolved. Using a whisk, gently stir in the chocolate. You want to avoid air bubbles. The glaze should coat the back of a spoon with about an ⅛ inch of the glaze. Cool about 1 minute. Use while still very warm.
