I happen to adore caramel in all of its many incarnations—almost as much as donuts. Here, I’ve combined two very different forms of caramelized sugar for a sort of one-two punch that is further emphasized by a teeny sprinkle of salt at the very end. You ideally want a flaked salt like fleur de sel, which will add a complex salinity to the sweet and bitter caramel.
