Dulce de leche, Spanish for “sweet milk,” is a thick, sweet caramel filling or sauce from Central and South America. It is made by slowly cooking sweetened condensed milk until thick and a rich nut brown color—a perfect topping for yeast donuts. Dulce de leche is now widely available in well-stocked groceries.
In a small saucepan over medium heat, combine the milk and butter. Heat, stirring, until the butter is melted and the mixture is hot but not boiling (about 125°F/52°C on an instant-read thermometer). Remove the pan from the heat and set aside.
Fit a stand mixer with the paddle attachment. In the mixing bowl, combine
