The sweet-spicy flavor of ginger is layered in these donuts in three forms: both the grated fresh ginger and the ground spice are mixed into the dough. Chopped crystallized ginger is scattered over the vanilla glaze that tops the finished donuts. A microplane grater is a great tool for grating fresh ginger.
