Bombolini are bite-sized, jam-filled donuts made from a traditional pâte à choux (cream-puff dough). They resemble small, light jelly donuts that, as the name suggests, explode in your mouth like a tiny, sweet bomb. Be sure to use a smooth jam or one with fruit pieces small enough to fit through the piping tip.

Method

In a saucepan over medium heat, combine the milk, butter, and salt and bring to a boil, stirring to melt the butter. Add the flour all at once and stir vigorously with a wooden spoon until the flour is incorporated and the dough pulls away from the sides of the pan in a ball. Reduce the heat to low and cook, stirring constantly, for 1 minute.

Scrape the dough into a large bowl. Using an
