This was always a good way of utilizing leftover fried fish. Take the cold fried fish and cut into bite-size cubes. Pour Italian dressing over fish. Refrigerate for about 1 hour or even overnight. Drain fish and add chopped cucumbers, finely chopped red onions, a few capers, and just enough mayonnaise to hold the salad together. Toss lightly, being careful not to break up fish. Serve on lettuce
