  • 2 cups water

Method

In a large pan, place 1 tablespoon of the butter and the 2 cups of water. Bring water to boil. Add cayenne pepper and 1 teaspoon salt to water. Place fish in boiling water and poach until fish is cooked, about 10 minutes. Remove fish from water; place on platter and keep warm. Reserve liquid.
