Ingredients

  • Whole trout (scaled and gutted)
  • Salt and pepper
  • Whole dried red peppers
  • Sliced onions
  • Olive oil

Method

You will need at least one 1½-pound trout per serving. Wash and wipe fish in and out. Season with salt and pepper. Fill cavity of each fish with dried red peppers and sliced onions. Close cavity. Brush outside of fish with olive oil. Grill fish over hot coals or an electric grill, turning twice. Brush oil over fish as they are cooking. This takes about 30 minutes. Test fish for flakiness.
