Remove heads from fish. Take out bones, leaving both sides intact. Salt and pepper fish; set aside. Put crawfish in a bowl and mash well. Place bowl inside a larger bowl that has been filled with crushed ice. Pour egg whites over crawfish. Continue to mix, adding salt, white pepper, and mace. Mash well into crawfish mixture.
