In a 3-quart heavy pot, heat margarine and vegetable oil. Add flour to hot oil, stirring constantly. Cook for 5 minutes.
Add onions, stirring as they cook. Add green peppers, celery, and garlic. Slowly add hot water. Mix well.
Add green onion, thyme, bay leaf, salt, crushed red pepper, and cayenne. Bring to a boil. Let simmer for 10 minutes.
Add crawfish tails and parsle
