  • 4 large soft-shell crabs (properly cleaned)

Method

Season cleaned crabs with 1 teaspoon salt and 1 teaspoon white pepper. Dredge crabs in flour; set aside. Place butter in skillet; heat over medium heat, being careful not to burn. When butter is hot, shake off excess flour from crabs and place crabs in hot butter. Cook for 10 minutes, turning crabs as they cook. Remove from skillet; set aside.
