  • 1 boneless pork loin (about 5 lb.)
  • Salt and pepper

Method

If pork loin is not split you will have to split it down the side. Salt and pepper meat well.

Mix chopped fruit together. Add 1 tablespoon of apricot nectar. Mix well, then fill loin with fruit mixture. With a good cotton string, tie roast to keep mixture in loin. Place in shallow baking pan. Pour remaining apricot nectar and the Madeira wine over meat.
