  • 1 4- to 5-lb. lamb leg (shank part removed)
  • 1 tbsp. salt

Method

Wash lamb and pat dry with paper towels. Mix salt, pepper, and curry powder together. Make six slits about an inch long and an inch deep into lamb. Fill each slit with 1 clove garlic and salt mixture. Rub extra salt mixture over outside of lamb. Pat flour over lamb.

Put oil and water in roasting pan. Place lamb in pan. Cook in 350-degree oven, basting from time to time, for about 45 min
