Meat was served mostly on special occasions because we didn’t have the money to buy it when I was coming up in the depression. We would go to the butcher shop and the man would cut the meat. If we had the money, we bought veal. We didn’t have anything else in the country. We didn’t have all of the inspections on meat that we have today either. Now we can enjoy veal more often. This is a wonderful recipe for it.
