Take cleaned quail and wash and pat dry. Place in bowl and cover with water; set aside.
Peel eggplant and cut into cubes. Place in bowl and cover with water; set aside.
Melt margarine in pot. Add onions; sauté for about 3 or 4 minutes. Add parsley, ham, garlic, salt, and pepper. Drain water off eggplant and add to ham mixture. Cook until eggplant is tender—about 15 minutes. Let
