Method

Make sure the hunter who gets the goose cleans the bird thoroughly. Wash bird inside and out, clearing cavity well. Season well with salt and pepper. Set aside.

In 5-quart pot melt butter; add green onions, pecans, celery leaves, and apricots. Cook for about 4 to 5 minutes over medium heat, stirring occasionally. Add rice, the teaspoon of salt, and the crushed red pepper. Stir well; add
