Cut chicken in half; place in large pot with salt, carrots, onions, celery, and whole red pepper. Pour water over chicken and bring to a boil. Let boil for 20 minutes. Chicken should be tender enough to remove meat from bones.
Remove chicken from water. Let cool. Save the stock. When chicken is cool enough to handle, remove skin (set skin aside) and pull chicken from bones. Discard bone
