Place beans in pot. Add water and onions. Bring to a boil. Let beans boil for 1 hour or until tender.
Lower heat. Add green pepper and garlic, stirring and mashing some of the beans against side of pot. Add thyme, parsley, bay leaf, and black pepper. Cook beans over low fire for 30 minutes longer or until beans are creamy. Served over boiled rice.
