Pick through beans, then wash beans thoroughly. Put beans to boil in water. Add all other ingredients except flour and oil. Bring to a hard boil and boil for 20 minutes. Lower heat and cook until beans are soft. All liquid should be just about out. Remove the ham hock.
Drain beans and reserve 1 cup liquid. Place beans in a blender, adding a little liquid. Blend to a paste consistency. F
