Heat drippings or oil in 3-quart saucepot. Add ham and fry for 3 to 4 minutes. Add onions and celery and cook until onions wilt. Add okra, tomatoes, water, salt, and cayenne; stir gently. Cover and cook over medium heat for 20 minutes. Add green pepper and shrimp. Mix well into okra, taking care not to break okra. Place lid on pot and cook until shrimp are just tender, about 5 minutes.
