  • 2 lb. fresh or 2 10-oz. pkg. frozen chopped

Method

Place spinach in boiling water; add salt. Boil spinach until tender, about 15 to 20 minutes. Drain spinach in colander.

In a small pot, heat butter. Add flour and stir well—be sure it does not brown. Cook for 5 minutes. Slowly add milk, stirring as you add. Add egg and nutmeg and whisk briskly.
