Shuck corn, removing all silk. Wash thoroughly with vegetable brush. Cut corn off cob and set aside. Peel and cube eggplants. Put in pan, cover with water, and let soak for 30 minutes. Place vegetable oil in pot; add ham. Sauté ham over medium heat for 10 minutes. Add onions. Stir well.
Drain water off eggplants, discarding water. Add eggplants to ham and onion mixture. Cover and let co
