For Eggplant
- 2 medium eggplants, cut lengthwise into ½-inch slices
- Grape seed oil cooking spray
Method
Sauce
- Heat oil in a medium skillet over medium heat.
- Cook shallots and garlic until soft.
- Reduce heat, and continue cooking until golden.
- Next add tomatoes, orange juice, thyme, salt, pepper and curry.
- Bring sauce to a boil then lower heat and simmer uncovered until sauce has thickened.
