3 cups sweet potatoes, diced

Sauce
- Heat oil in a medium skillet over medium heat.
- Cook shallots and garlic until soft.
- Reduce heat, and continue cooking until golden brown.
- Add tomatoes, orange juice, thyme, salt, pepper and curry.
- Bring sauce to a boil then lower heat and simmer uncovered until sauce has thickened.
