  • About

The key to making a nut-based alternative is to use fermentation in a similar way as traditional cheese. In this “chèvre,” you’ll grind softened soaked almonds to a smooth purée, then add the contents of a vegan probiotic capsule. Those microbes will go to work fermenting the nuts, adding a tangy taste.

Ingredients

  • Slivered almonds, 1½ cups (7 oz/200 g), soaked overnight and drained
  • Vegan probiot

Method

  1. In a powerful blender or food processor, mince the almonds. Add ½ cup (4 fl oz/120 ml) water and the acidophilus and blend until very smooth. Scrape down and repeat to get all the little chunks completely puréed. Transfer the mixture to a storage container or bowl and cover loosely with a towel. Let stand at room temperature for 24-48 hours. The mixture will look bubbly.
