With this recipe we are using smoked salmon, which may sound expensive for a midweek meal, but it is no more costly than cooking with red meat! And remember you can’t stint on A grades! Treat yourself.

Ingredients

  • 1 litre chicken or vegetable stock (made from 2 stock cubes or pots)
  • 4 tbsp butter or olive oil

Method

  1. Put your stock into a small pan and heat up until simmering.
  2. Heat the butter or oil in another large saucepan or frying pan and fry the onion for about 10 minutes over low heat until softened but not browned. Stir in the rice and cook for 2 minutes, stirring all the time to coat in the oil.
