Take vegetable stock of this one-pot recipe. It’s super-quick, vegan friendly, and full of veggies to power the brain. Unleash the inner boffin with this simple vegetable broth. Deviating from the recipe to incorporate other veg is fine too: try spinach, spring onions and courgettes.

Ingredients

  • 2 tbsp vegetable oil
  • ½ red onion, thinly sliced
  • 1 tsp

Method

  1. Add the vegetable oil to a large saucepan with a lid and heat over a medium heat for 1 minute. Add the onion, garlic, broccoli stalks and carrot with a pinch of salt and cook for 3–5 minutes with the lid on, shaking the pan every so often, until they start to soften.
  2. Add the cabbage along with the ginger and chilli flakes. Stir the mixture, put the lid back on
