I know I’ve made the name of this sound like a Harry Potter spell, however this IS magic. A quick-and-easy asparagus omelette that makes the most of asparagus when it’s in season. Serve up this veggie brain buster in super-quick time to give you everything you need for a major library session.

Ingredients

  • a few spears of asparagus
  • 2–3 eggs
  • a knob of butter

Method

  1. Hold each asparagus spear at both ends and bend gently until it breaks. It will naturally split where the tough, woody part ends, and you can just throw these ends away.
  2. Fill a medium-sized frying pan with water, bring to the boil and cook the asparagus for 4 minutes until just tender. Drain, slice in half lengthways and set aside.
