A great way to use some simple spices and cupboard ingredients to make something very different. Go as spicy as you like with this one – especially if you are all trying to save money on heating bills in the cold winter months!

Ingredients

  • 200 g red lentils
  • 1 tomato, chopped
  • ½ x 400 g tin c

Method

  1. While the potatoes are baking, put the red lentils in a large saucepan with 500ml water. Bring to the boil, then add the tomato, coconut milk, green chilli and a good pinch each of cardamom, turmeric and coriander, if you have them.
  2. Bring to the boil and simmer for about 20 minutes, stirring occasionally, until the lentils are soft and quite mushy.
