Popovers

Also known as Yorkshire puddings, these rolls are often served alongside roast beef with the rendered fat that greases the pan, adding a lot of rich flavor. Special popover pans have deep and narrow cups that make the tallest rolls. You can use a muffin pan, but make sure the edges around the cups are greased, too, or the batter will stick as it mushrooms over.
