A good rosemary-olive oil or sourdough artisan loaf really boosts the flavor in this dish, additionally enhanced with a butcher-made or store-blended breakfast sausage bought in bulk by the pound. Stir in 1 tablespoon fresh chopped sage and swap out basic cheddar for smoked Gouda for a twist.
Butter a 13x9-inch baking dish.
Cook sausage in a large skillet over medium-high heat, stirring frequently, until meat is browned and no longer pink. Drain excess oil, if necessary.
Layer half of bread cubes in bottom of baking dish. Top with half of sausage and 1 cup cheese. Repeat layers once with remaining bread, sausage, and 1 cup cheese.
Whisk eggs in a large bowl.
