This is one of my favorite brunch (or dinner!) dishes for many reasons, including its amazing flavor and ease of preparation. I am an avid sockeye salmon fan and will always recommend any of the Pacific species of salmon. I prefer the silky texture of cold smoked salmon, but firm, hard-smoked or even canned pink salmon is delicious in this recipe too.
