Cotija is a crumbly, salty cheese that adds both flavor and texture to this well-seasoned casserole. If you can’t find cotija, substitute feta cheese. Poblanos are large, dark-green peppers that are generally mild in flavor. I prefer a soy-based vegetarian chorizo because many pork-based versions are greasy. If using pork chorizo, drain after cooking.
