This Chinese-inspired dish is basically a vegetable omelet that is browned a bit more than a traditional French-style omelet. It’s a great low-budget way to use up extra vegetables because you can substitute almost any vegetable for the bell pepper, celery, and mushrooms. Try zucchini, cauliflower, or spinach, for example!

Ingredients

  • 1 cup chicken or vegetable broth
  • 1 tablespoon low-sodium or regular soy sauc

Method

Combine broth, soy sauce, vinegar, and sesame oil in a small saucepan over medium heat. Whisk together 2 tablespoons water and cornstarch in a small bowl. Add cornstarch mixture to broth mixture. Simmer over medium heat for 2 minutes, stirring frequently, until mixture thickens slightly. Remove from heat and keep warm.
