Egyptians take great pride in their falafel, known locally as tameya. Unlike the chickpea-based versions indigenous to the Levant, tameya is made from fava beans and a generous mix of fresh herbs and greens, giving it a vibrant pop of colour. This fava bean mix can be made without the egg for the classic tameya or used as an encasement to a silky soft-boiled egg as we show below. Serve the tameya or Scotch eggs with bread and salty feta for a perfect finish.
